Our newest coffee is made by Norbil Perez, a founder member of Aromas del Valle Co-operative. His 4-hectare Finca La Chirimoya is situated in Santa Teresa at an extraordinarily high elevation. Every season, Norbil's hard work and attention to detail lead to continuous progress. In order to improve cup complexity and the value added to farmers' coffee, he regularly participates in training and seminars with his cooperative on productivity, quality, and the testing of novel fermentation and drying techniques.
This lot cleaned by prolonged fermentation is hand-picked. To further choose the densest (best) cherries for processing, ripe cherries are floated. After 50 hours of fermentation, the cherry are pulped, fermented once more for 42 hours, and then cleaned and dried on raised African beds. On average, drying takes 17–18 days.

Although you are free to brew this coffee however you please, we strongly advise using a filter technique, such as a Chemex, V60, or batch brewer, for optimal results.
