Edwin Mazorra's father first acquired Miraflores farm and grew commodity coffee for years before shifting into specialty coffee. Starting with caturra, colombia, and pink bourbon varieties, the shift from quantity to quality has proven successful. Edwin continues his family's journey by continually improving the farm and expanding their plantings and varieties.
Only ripe cherries were harvested, sorted by density, and sanitized. The skin and fruit were removed, leaving a thin layer of mucilage. The cherries were then placed on air-flow canopy beds and dried for 16-20 days, being turned multiple times a day.
