
This lot is a unique cross between Mundo Novo and compact Caturra, developed by the Instituto Agronomico (IAC) in Campinas, Brazil and expertly cultivated by Colombia's own Ivan Villaquira.
We love coffees from this part of Colombia for their vibrant, layered profiles. They’re a true expression of the region’s rich volcanic soils and high elevations. The microclimate around Villa Alejandría supports slow cherry maturation, resulting in coffees that are naturally sweet, juicy, and full of character.
Cherries for this lot are harvested at peak ripeness, floated and hand-sorted to remove defects, then undergo 30 hours of underwater fermentation to develop depth and complexity. After pulping, the parchment is gently washed and dried in temperature-controlled conditions to achieve the perfect moisture level and preserve clarity.
In the cup, you’ll find a bright, elegant sweetness with notes of mandarin, molasses, and plum. It’s a beautifully balanced coffee that highlights Ivan’s skill and the region’s stunning terroir.
