The Alarcón family, the owners of the farm, own approximately 100 hectares of land, with the highest point reaching an altitude of 2,100 meters. They cultivate coffee on 17 hectares of land within the area, and La Palestine Farm is one of them.
While this area boasts abundant water resources and biodiversity, it also faces harsh natural conditions such as strong sunlight and heavy rainfall. Therefore, during the coffee drying process, they utilize covered drying racks and cover sheets to adjust the drying time.
The four brothers, Jose, Juan, Anibal, and Inocencio, inherited the farm from their father, who converted the land from former pastureland into a coffee plantation. Since 2019, they have been working with Origin Coffee Lab, a local export company. They say that their work has become more precise thanks to their business dealings and advice on coffee cultivation and processing. They meticulously remove low-density, immature, and defective beans, striving for a clean, pure flavor. After removing the pulp, the beans are fermented slowly for 36 hours with the mucilage still attached. This process gives the coffee a rich flavor and depth. After fermentation, the beans are carefully washed three times with clean water to achieve a clean taste free of off-flavors. After pre-drying, they are placed on well-ventilated African beds. They are slowly dried for about 15 days, while their condition is carefully monitored, to bring out their maximum potential.
