Super sweet coffee with a distinctly creamy texture. The taste is of nougat, plums and a light hint of cherries.
This is no ordinary natural, Black Pearl plays by its own rules. They invented it in Costa Rica and today they are working magic with it elsewhere as well. The cherries are dried whole, slowly and without significant turning. The fermentation has time to develop in depth, but everything remains under control.
Our lot comes from Nicaragua from the Mierisch family of the Ethiosar variety, a coffee cross with the original Ethiopian coffee.
And the taste? Dense, creamy and sweet, with a taste of nougat, plums and a light hint of cherries , everything goes perfectly together.
About the farmer
The Mierisch family has been growing and processing coffee for over 110 years, making them one of the oldest coffee farming families in the country. The family owns 9 coffee farms in Nicaragua and 3 coffee farms in Honduras. Each farm has a unique microclimate and soil composition, which makes the farming and quality of the coffee truly different from each other. Over the past 5 generations, they have innovated in farming practices, sorting, batch tracking and system efficiency. They like to focus on world-renowned rare varieties with unique characteristics.
Finca La Escondida is located in Jinotega, Nicaragua, at the foot of the same mountain as its neighboring farms Las Delicias and San Jose. It’s not just any ordinary coffee plantation—it’s a testing ground for new varieties for the entire Fincas Mierisch. Before any of them make it to the other farms, they have to go through rigorous testing here. Currently grown here are H1 Centroamericano, Yellow & Orange Pacas, Tekisic, Obata, Venecia, Pink Bourbon, SL-28, and Arara.
The farm covers 70 hectares of coffee trees at an altitude of 975 to 1230 meters above sea level, which gives it excellent conditions for growing quality coffee. It is looked after by 25 permanent employees throughout the year , but during the harvest the team is expanded by another 180 seasonal workers.
