This exclusive Geisha coffee is very complex, with a syrupy mouthfeel and a deep, lingering aftertaste. We taste sweet peach tarts and lychee with a brown sugar sweetness and lots of fine floral notes.

Perfectly ripe Geisha cherries are stored in hermetically sealed tanks at cool ambient temperatures for prolonged periods in excess of 100 hours. During this time, nitrogen is periodically injected into the tanks to remove any residual oxygen. To ensure consistency, internal and external temperatures and pH are monitored several times a day. The advanced nitrogen maceration natural anaerobic process transforms the whole cherries into a symphony of unique syrupy flavors. The cherries are then slowly dried for up to 30 days on Deborah's three-tier uniform drying system.

Finca Deborah's mission is to cultivate, process, and deliver only the highest quality coffee available anywhere in the world. Located at an elevation of 1900+ meters and nestled deep in the mountains of Volcan, Finca Deborah is often shrouded in dense cloud coverage for most of the year. The plantation boasts a beautiful, natural environment where rare species of plants and animals thrive, and where Geisha coffee grows to its full potential under the protection of the lush rainforest canopy. Carefully monitoring the harvesting process is one of the most critical steps in a long list of quality control requirements.
