STORY
Located on the shores of Lake Kivu in Nyamasheke District, western Rwanda, the Lugari Coffee Washing Station (CWS) produces high-quality coffee in a beautiful, hilly setting. The region's large temperature differences between day and night foster aromatic and complex flavor profiles, resulting in numerous batches characterized by delicate and refined flavors.
Coffee cherries delivered to the CWS are first weighed and flotation-sorted. The pulp is then removed using a pulper and placed in a fermenter for 6 to 12 hours of dry fermentation. After mucilage removal, the cherries are graded by specific gravity in a water channel. The wet parchment is then carefully hand-sorted under shade before drying. The parchment is then transferred to a drying table and carefully dried in the sun. Staff stir the parchment every 30 minutes to promote uniform drying. During hot weather or rainy days, the parchment is protected with plastic to prevent rapid or uneven drying. Finally, when the moisture content reaches 10.5%, the coffee is bagged and stored in an appropriate environment.
