The Sipi Falls Washing Station is a proect developed by Kawacom to improve the quality of coffee produced by small-holder farmers on the slopes of Mt. Elgon. The washing station was built in 2012 & processes the coffee of around 14 thousand farmers. The project also involves training farmers in growing, harvesting & processing coffee. This lot was processed naturally. After harvesting, coffee cherries are delivered to the washing station where they’re washed, sorted for under/over-ripe fruit & defects. The cherries are then spread out to dry on raised beds for 14-21 days. The dried cherry is then removed mechanically.
-- BREW GUIDE
This is a light espresso roast. Roasted to bring out the fruity flavours of the coffee. This style of roast is best suited for black espresso based drinks. That said, you can still make a tasty flat white out of this roast.
