
The Sirinya family is the first Thai coffee farm we've worked with, and we admire their dedication to farm development, from orchard management to processing. Khun Gow is the grower and processor, while Khun Oi handles the back-end operations. This is our third year of direct trade with the Sirinya family, and we've seen them continuously experiment with new possibilities for coffee, developing processes from the source—variety, soil, growing location, water management, and processing. Their farm emphasizes chemical-free farming and encourages local communities to adopt similar methods, making cultivation more environmentally friendly.
This coffee is processed using the Anaerobic Natural Mossto method, which involves fermenting coffee cherries in an anaerobic environment. The coffee is washed, and then fermented again using waste products from the Natural Amarone process. The pH of the Mossto water is measured before and controlled throughout the final fermentation process before drying.
